Ingredients: 4 steamed and peeled beets 1/4 cup olive oil 1/4 cup balsamic vinegar 1 5 oz. spring salad mix 1/4 cup pecans or walnuts 3 oz. soft goat cheese, crumbled Salt and pepper to taste
Directions: 1. Slice your beets into 8 pieces by cutting them in half, then in half again, then in half again one last time. 2. Whisk together your olive oil and balsamic vinegar to make the dressing. You can add salt and pepper to taste, or wait to add it as a garnish at the end. 3. Toss your mixed greens with roughly 3/4 of dressing, then split the greens evenly amongst four plates to serve. 4. Split sliced beets and crumbled goat cheese evenly amongst the four plates, adding each atop the bed of greens, then drizzle with what's left of your dressing and topped with crushed or chopped nuts. Enjoy.
